Mum's Chilli Cheese Cookies


These cookies are savoury and very nice. The recipe is from my mum. You can adjust the level of chilli according to taste. They are nice as afternoon snacks, and go well with black tea.

100 gr. butter
80 gr. canola oil
2 eggs (seperate 1 yolk for glazing)
1 cup grated cheese (mix cheddar and feta)
2 teaspoons pepper paste
1/2 teaspoon cayenne pepper
1 teaspoon paprika
3 cups plain flour (I exchanged 1 cup with wholemeal)
3 teaspoons baking powder

Nigella seeds (black sesame seeds)

Oven: moderate 180 degrees.

Melt the butter until soft. Mix with 2 egg whites, and 1 egg yolk. Add all the ingredients except flour, and mix. Sift the flour, and knead lightly into a soft dough.

Roll the dough to 1 cm thickness, using a rolling pin. Cut out circles with a special cutter.

Place the cookies onto the lightly greased tray. Glaze with egg yolk using a brush. Sprinkle with nigella seeds. Used two trays, and placed in the oven twice. Made approximately 30 cookies.

Bake in moderate oven for about 20 minutes. Cool in trays.
